Coconut Rice

Coconut rice is a great side to so many dishes! This creamy dish is filling, and a good source of healthy fat in your meal. It is so easy to make, and it only takes 3 ingredients to make this tasty side!

Ingredients:

  • 1 can unsweetened coconut milk (13.6 fl oz)
  • 1½ cups uncooked rice
  • 1½ cups water

Instructions:

  1. Add all ingredients to a sauce pan over med-high heat
  2. Stir periodically
  3. Once the rice starts to simmer, keep a close eye on the pot. You want to take the rice off of the heat when there is just a tiny bit of liquid left to prevent burning or sticking to the bottom.
  4. Remove the pot from heat once the rice is creamy, but not all the liquid is absorbed. Stir, then let set for 5 minutes, then enjoy!!

I’m Maddie!

Welcome! I am a wife, mom, and foster mom striving for simple living on our little farmstead. I’m somewhere in the middle of the one that went off the deep end and enjoying the conveniences of living in the 21st century.
