Coconut rice is a great side to so many dishes! This creamy dish is filling, and a good source of healthy fat in your meal. It is so easy to make, and it only takes 3 ingredients to make this tasty side!

Ingredients:
- 1 can unsweetened coconut milk (13.6 fl oz)
- 1½ cups uncooked rice
- 1½ cups water
Instructions:
- Add all ingredients to a sauce pan over med-high heat
- Stir periodically
- Once the rice starts to simmer, keep a close eye on the pot. You want to take the rice off of the heat when there is just a tiny bit of liquid left to prevent burning or sticking to the bottom.
- Remove the pot from heat once the rice is creamy, but not all the liquid is absorbed. Stir, then let set for 5 minutes, then enjoy!!
